Mexican Specific Carbohydrate Diet Recipe: Taco Salad

I’m not sure how everyone else feels but I miss Mexican food! When I think of comfort foods, Mexican is high on my list and with the weekend approaching there is no better time than now. Of course, I don’t miss a horrible stomach ache, multiple trips to the bathroom and paint eating acid reflux that traditional Mexican caused me… but I do miss the flavor and experience.

In the spirit of adventure, I decided to scratch my itch for some Mexican inspired food. In the past, after multiple successes eating lettuce burgers I tried making tacos using romaine hearts but usually end up with more food on my shirt than in my mouth. So, this time I did some internet searching for Mexican recipes that I thought could be made SCD style. There were many that could have been done with some prep work and baking but my laziness got the best of me. Instead, I opted for a quick and dirty Mexican meal that I shall call a taco salad.

SCD Legal Taco Salad:

  • 1 lb of ground beef browned
  • Romaine hearts chopped
  • Chopped fresh onion
  • Chopped fresh tomatoes
  • Banana peppers
  • Jalapeno peppers
  • Fermented salsa

First, brown up your beef. To stay Mexican themed, I used plenty of cumin, black pepper and red pepper flakes for seasoning. Next, chop up your romaine hearts into ¼ inch wide strips. Pile the strips on your plate. Add more foods according to your flavor buds, but I topped mine with ½ pound of the beef, a couple handfuls of chopped onion and tomato and then threw on the banana and Jalapenos peppers. Lastly, instead of topping it with cheese I went with some already prepared fermented salsa that I had in the fridge. It tasted delicious and fully satisfied my Mexican cravings.

SCD Legal Taco Salad!

I recently confirmed I’m allergic to cow’s dairy, so I’ve cut out all forms of cheese and dairy for now. If you can tolerate it, don’t be afraid to top it with some unsweetened SCD Legal yogurt and cheddar cheese or customize by adding any other vegetable I left out. The best part is you can create your lunch for the next day by taking all your leftovers and creating a 2nd SCD legal taco salad.
