Much to my astonishment, I have discovered a connection between my intake of even 24 hour fermented dairy(yogurt, kefir,) as well as butter and cheese, to my RLS. I discovered it when one of my 24 hour cultures of homemade yogurt, for IBS, didn’t turn out and it took a week to get another culture finished. My RLS symptoms stopped during that time. I have tested the theory and it has proven, in my case, to be a culprit. With even a taste of dairy, I can have RLS symptoms for many days. It may be casein, because the lactose, to my understanding, has been removed during a 24 hour ferment. I have not experimented with ghee yet.
