Thanks for the suggestions. I travel as an airlines be pilot in central and South America and they are masters at organ meats.

I highly recommend any Peruvian ways of preparing them as they are the gourmands of the World. Particularly, Anticucho. They serve it everywhere cheap as chips. It’s marinated cow heart on a skewer grilled over a charcoal fire. It’s truly insane! I pasted a recipe above but don’t hesitate to try others. It’s very economical and you just sabor the flavour in your mouth.

Mexicans, Guatemalans and others make brain tacos that are to die for.

Uruguayans and Argentinians have a national platter of assorted grilled organs including not so fun twig and berries of the bull. They have liver, kidneys and heart, etc. The rest of it is pretty good.

If you’re looking for a fat increase in your diet. There is an amazing but similar dish from Uruguay that is used as a starter snack when grilling with friends. It’s called Pechito de Cerdo. It’s the area on the side of the outer wall of the abdomen muscles just forward of the hind legs, with a 1/2 layer of fat on it. You soak it in lemon juice and coat it liberally with salt. Then slow cook it for 45 min on a charcoal fire, fat side down. It’s chrucnchy juicy heaven.

Hope those suggestion help expand your palet. Along with any of these dishes is scd friendly chimichurri sauce from Argentina or Uruguay to put on top of the meats to give it flavour and for heart healthy benefits!

Also, are you aware of Ray Peats take on Omega 3 and fish oil? You feel better initially but then it actually causes havoc for the rest of your life? I’m looking for the chemistry of why Ray Peat may be incorrect 🙂
