Keller’s Creamery relates on their website that one of the additives to butter can be lactic acid which, if I recall from reading E. Gottschall, is really bad for the gut (at least it is when the body produces it). So I found this link on how to make your own butter:

I tried it, and it’s amazingly simple. A food processor turns 2 cups of cream into butter in 4 minutes. Then you rinse out all the extra liquid with ice water and you’re good to go! We’ll see if it makes any difference. Thanks again for the informative posts, I always look forward to them.
